Borlotti beans are a legume with a rich flavor and creamy texture, grown in various regions, including Piedmont, where our company headquarters are located. They are appreciated for their versatility in the kitchen and are used in many traditional recipes of Italian cuisine.
Rich in plant-based protein, fiber, and other nutrients, pinto beans are a great source of energy. They can be used in soups, stews, salads, and main dishes, adding flavor and texture to dishes.
SOAKING
Collect the beans in a bowl and soak them in cold water 1, for about 12 hours. After the soaking time, rinse the beans under running water and let them drain well.
PREPARATION:
Transfer the beans to a pot, covered with cold water, and flavour with bay leaves and rosemary, then place on the heat and leave to cook for about 1 hour, on a low flame, without adding salt.
Prepare the soffritto, heat a drizzle of oil in a pan, add the prepared soffritto and leave to fry on a low flame for about 5 minutes, adding a couple of spoons of water if necessary.
After the first hour of cooking the beans, add the soffritto, season with salt and continue cooking for half an hour. If the beans dry out too much, add a glass of hot water.
Remove the beans from the heat and season them with a drizzle of raw oil.
