Green lentils are of the prized small variety that do not require soaking before cooking, but only a rinse under cold water to eliminate any impurities.
They have an intense aroma and flavour, the consistency is compact, they do not crumble during cooking and are therefore perfect in salads or stews.
Steamed:
Wash the lentils in a colander under running water. Place them in a saucepan and cover them with cold water so that they are completely submerged. Lentils increase in volume by at least 2 times when cooked, so it is necessary to measure out the water well to prevent them from burning during cooking. If the lentils have absorbed all the water during cooking but are still cooked, you can add more water, making sure to heat it first. Cook the lentils for 20-40 minutes on a low flame. If you want to prepare a soup or use them as a side dish, add cold vegetables such as celery, carrots, tomato, garlic or onion and aromatic herbs such as bay leaves, rosemary, sage or even juniper berries together with the lentils. Add salt only at the end of cooking, remove from the heat and enjoy with a drizzle of extra virgin olive oil or use them as an ingredient for your recipe.
Steamed or pressure cooked:
Wash them in a colander under running water. Pour the lentils into the pressure cooker and fill it with water until they are covered, without exceeding. If you want, you can add the vegetables and herbs you prefer cold, season them with a drizzle of extra virgin olive oil, close the pressure cooker and cook the lentils for 20-25 minutes from when the pot starts to whistle. After the indicated time, turn off the heat and raise the valve to allow the steam to escape completely, before opening the lid. At this point, open the lid, salt the cooked lentils and use them as you prefer.
