The Neppo Farmer's Soup is a selection of high quality dried legumes of our production. This legume soup is composed of a combination of different varieties of beans, lentils and chickpeas, which are distinguished by their individual characteristics and their nutritional properties very important for our body.
You can use it to prepare soups, broths, salads, stews or traditional Mediterranean dishes, giving your meals a touch of color, flavor and authenticity.
SOAKING:
In a large bowl , soak the legumes for at least 8 hours , making sure the water is cold. After this time, rinse the legumes one last time and remove all the excess water.
PREPARATION:
Fill a large pot with cold water and add the sliced tomatoes and bay leaves, add the legumes and cook for at least 2 hours. Bring to the boil, adding salt and pepper to taste. In the meantime, put the celery, carrot and shallot in a blender and chop them. Proceed to make the soffritto, then put them in a pan with 2 tablespoons of extra virgin olive oil.
At this point, put some of the legumes that you have drained in the food processor until you obtain a soft and fluffy cream, then add it to the soffritto. Now cook on a low flame for at least 20 minutes, gradually adding the vegetable broth: this is a recipe that requires a lot of patience but its taste will amply repay you.
Once cooked, add the mixed legumes that you had set aside. Garnish with a drizzle of extra virgin olive oil, chopped parsley, grated parmesan and salt and pepper to taste .
